1-1/4 cups corn
1 small chopped onion
1 small tomato, chopped
2 Tbsp. chopped cilantro
1 tsp. diced red pepper
1 Tbsp. lime juice
2 tsp. Dijon Mustard
1/2 tsp. brown sugar
Cook corn in ungreased skillet on medium-high heat 4 to 5 min. or until golden brown and roasted; let cool
COMBINE corn, onion, tomato, cilantro and diced red pepper in bowl. pour lime juice, mustard and sugar; into corn mixture and stir. Set aside.
PLACE ham steak on griddle ; brush with barbecue sauce. Grill 8 to10 min., turning once. Serve with roasted corn relish.
Very Simple Very Tasty and less than a half hour to make . Can't beat that
