For Breakfast Tomorrow
- 2 eggs
- 3 tbsp whole milk
- Salt and pepper to taste
- Cooking spray
- 1/4 cup pizza sauce
- 8 slices pepperoni
- 1/4 cup black olives
- onions to taste
- 1/4 cup shredded Mozzarella cheese
- 4 tbsp grated Parmesan cheese
Pour in egg mixture. As mixture sets at the edges, with spatula, gently push cooked portions towards center. When eggs are almost set on surface but still look moist, add pepperoni, olives and onions to center of the omelette then fold on to warm plate.
Top with Pizza Sauce, Parmesan and Mozzarella cheese.
