Bacon and Eggs Brunch Recipe

I love this anytime of the day
the tomatoes are what makes
this for me.
  • 2 tablespoons margarine
  • 8 eggs
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • 1/2 cup sun dried tomatoes
  • 1small red onion diced
  • 6 ounces mild cheddar cheese
  • 3/4 pound Thick Cut Bacon, diced
  • 1/4 cup maple syrup


Melt margarine in an 11-in. x 7-in. baking dish in a 325° oven; tilt to coat bottom and sides. In a bowl, beat eggs, sour cream, milk,sun dried tomatoes and salt. Stir in onions. Pour into baking dish. Bake uncovered at 325  for 20 minutes or just until eggs are set. Place bacon in skillet Pour syrup over and sprinkle with brown sugar, Cover and fry till crisp . Cut egg dish into squares and arrange on platter with thick cut bacon , sprinkle with cheese
